Sample Meal Plan

Light & Fluffy Cornmeal Pancakes

INGREDIENTS

  • 1/4 cups cornmeal (yellow, white or blue)
  • ¾ cup unbleached whole wheat flour
  • 3 tablespoons honey
  • 1 1/2 teaspoons baking powder
  • 1/4 tsp baking soda
  • Pinch of sea salt
  • 1 tablespoon melted butter
  • 1 large egg, beaten
  • 1 cup low-fat or non-fat milk
  • Cooking spray

DIRECTIONS

In a bowl, whisk together dry ingredients until incorporated well. In another bowl, combine egg, honey and butter until mixed well. Add the egg mixture to the dry ingredients until blended, but don’t over mix. Spray pan with cooking spray (medium high heat) and pour about ¼ cup per pancake.


Pineapple Strawberry Dino Smoothie

INGREDIENTS

  • 1/4 cup chopped frozen pineapple
  • 1/4 cup frozen strawberries
  • 1/2 banana
  • 1 palmful of kale (you won't even taste it!)
  • 1/2 cup milk (traditional or try rice, almond or soy)

DIRECTIONS

Blend until smooth or add ½ cup of ice to lighten and make frosty.


Hero Pita & Mixed Veggies

INGREDIENTS

  • 1/2 pita bread (6 inch)
  • 1/2 c. torn lettuce
  • 1 oz. smoked ham
  • 1 oz. smoked turkey breast
  • 2 thin tomato slices
  • 1/2 oz. shredded cheddar cheese
  • 2 tbsp. Zesty Italian dressing, light
  • 1 c. mixed raw veggies

DIRECTIONS

Cut the edge from top of pita. Fill with lettuce, meats, tomatoes and cheese. Drizzle with dressing, roll and wrap in plastic wrap or store in a plastic container with a lid. Refrigerate until ready to eat. Serve with 1 c. side veggies.


Peanut Butter and Apple Bites

INGREDIENTS

  • 1/2 apple, sliced
  • 2 tbsp natural peanut butter
  • Drizzle of honey and cinnamon to taste

DIRECTIONS

Serve peanut or almon nut butter in a small bowl with honey and cinnamon. Cut apples into spears and dip.


Easy & Healthy Chicken Stroganoff

INGREDIENTS

  • 2 chicken breasts, skinned, boned and sliced into one inch strips
  • 1 to 2 tsp. minced garlic
  • 1/2 tsp. pepper (white, if available)
  • 1 can low-fat, reduced sodium cream of chicken soup...

DIRECTIONS

Preheat oven to 400°F. Spray casserole dish with non-stick spray and place raw chicken strips inside. Combine garlic, yogurt or sour cream, soup, pepper, Worcestershire sauce and mushrooms. Pour over chicken. Bake for 30 minutes or until chicken is no longer pink.


Watermelon Slushy

INGREDIENTS

  • 1 frozen banana
  • 1 cup frozen pineapple tidbits
  • 1/2 cup frozen strawberries
  • 2 cups fresh watermelon
  • 1 tablespoon unsweetened, dried coconut
  • 1/4 cup fresh lime juice

DIRECTIONS

Combine all ingredients in a high-speed blender and process on high until smooth and enjoy.
